Ingredients

Here’s everything you’ll need for the perfect taco soup:

  • Ground Beef: I’m all about protein, so I used 11/2 lbs of lean ground beef to make this soup really hearty. You can swap the beef out for ground turkey or ground chicken or make it vegetarian by omitting the meat and adding more beans and veggies.
  • Onion: Diced for a flavor-packed soup base.
  • Jalapeños: Membranes and seeds removed, finely chopped for a little earthy kick.
  • Garlic: Minced, because everything tastes better with garlic – right!?
  • Taco Seasoning: A combination of chili powder, cumin, oregano, salt, and pepper gives this soup its vibrant savory flavor.
  • Zoup! Beef Bone Broth: Adds exceptional richness and robust flavor.
  • Beans: Drained and rinsed. I used black beans and pinto beans for this soup. They are an amazing source of protein and fiber. You can also try other canned beans like Great Northern, Kidney, or Cannellini beans.
  • Canned Diced Tomatoes: I prefer petite diced tomatoes with their juices for this recipe.
  • Canned Tomatoes with Chilies: With their juices for some zesty flavor.
  • Tomato Sauce: This thickens the broth just a bit and adds a little brightness to the soup.
  • Frozen Sweet Corn: For some sweetness, fiber, and a beautiful color combo.
  • Fresh Cilantro: I love cooking with fresh herbs like cilantro.
  • Toppings: Add all your favorite taco toppings… shredded cheese, sour cream, green onions, jalapenos, cilantro, diced tomatoes, chopped avocado etc.

How to Make Taco Soup

In a large pot or Dutch oven over medium heat, add olive oil, ground beef, salt, and pepper and cook for 5 minutes or until cooked through.

Add diced onion, diced jalapeno, and sauté for 3-5 more minutes.

Then add the minced garlic to the pot and cook one more minute.

Adding spices to the cooked ground beef, onion, garlic and jalapenos.

Next, add the chili powder, cumin, oregano, and stir.

Stir in diced tomatoes, tomatoes with green chiles, tomato sauce, black beans and pinto beans, cilantro, and Zoup! Beef Bone Broth.

Next, bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.  Then add the corn and simmer for 5-7 more minutes.

What to Serve with Taco Soup

This recipe is really a well-balanced meal all by itself.  But if you want to add something on the side, some Cheesy Jalapeño Beer Bread or Caribbean Cornbread would be delicious.

And don’t forget about the toppings!

  • Tortilla chips or tortilla strips
  • Shredded cheese
  • Sour cream
  • Diced avocado
  • Fresh chopped cilantro

Storing, Freezing, and Reheating

If you happen to have any leftovers, you can store them in the fridge in an airtight container for up to 5 days.  You can also freeze this Taco Soup recipe for up to 3 months in an airtight freezer container.

To reheat the soup on the stovetop, place it in a pot over medium heat, add more broth if needed, and stir occasionally until it’s warmed through.

To reheat in the microwave, use a microwave-safe bowl, heat in 1-minute intervals, and stir between each interval.  (If needed add more broth.)

Substitutions and Variations

Protein: Swap out the ground beef for ground turkey or ground chicken.

Beans: Use different canned beans like kidney beans, Great Northern beans, or cannellini beans.

Spicy Heat: Add more fresh jalapeños, hot sauce, or hot taco seasoning for more heat.

Low-Carb: Skip the beans and corn, and use extra meat and veggies.

Can I make taco soup ahead of time?

Absolutely! Taco soup tastes even better the next day as the flavors mingle together.

Can I make taco soup in the crock pot? 

Yes!  Brown the ground beef in a skillet, then add it to a slow cooker with the remaining ingredients and cook on low heat for 6 hours, or high heat for three hours.

Is taco soup gluten-free?

It can be!  To make gluten-free taco soup, check the packaging of your seasonings, canned ingredients, and corn to ensure they are also gluten-free.
